When it comes to proteins, there’s no better route than eggs. And if you happen to be an eggetarian, you’d know the value that eggs have in your life. Eggs have a high satiety index and make you feel fuller, which means you won’t get those unnecessary hunger pangs for a while after eating them. The egg yolk contains iron, which implies you won’t feel burned down and sluggish and suffer from anemia as well. With so many health benefits, we bet you’d want to know some fun ways to cook eggs. Here are some recipes…
What you need: 1 medium avocado, 2 eggs, 2 slices of toast, sea salt and black pepper to taste and fresh chopped tomatoes.
Preparation: Preheat your oven to about 425°C. Crack the eggs in a bowl and keep them aside. Cut the avocado in half and get rid of the seeds. Take note that the cavity in the avocado should be big enough so it fits one small egg. Next, in a medium sized baking dish, keep the avocado in such a way that the raw egg doesn’t spill out. Gently scoop out the egg yolk and then place it in the avocado cavity. Then spoon the egg white into the avocado till it’s filled up. Add salt and black pepper on the eggs. Post this, place the baking dish inside the oven and bake for about 20 minutes. Once it’s done, add chopped tomatoes on top and you can serve this dish with ketchup. This one’s a healthy egg recipe and can be had as a snack or even for lunch.
Egg soup
What you need: Chicken broth, broccoli, mushrooms, onions, carrots and celery—all sliced and 1 egg.
Preparation: Heat the broth and add the vegetables to the broth. Towards the end of the process, add an egg white and stir continuously. Once it turns white, it’s ready to be served.
Creamy scramble
What you need: 2 tablespoons cream cheese, 1 tablespoon butter, 2 eggs, 2 teaspoon chopped chives and salt and pepper to taste.
Preparation: Heat butter in a non-stick pan over medium-high heat. Add the beaten eggs along with the cream cheese and chives. Whisk and add the salt and pepper, Whisk again till it takes the scrambled form. Serve with toast!
Baked potato with egg on top
What you need: 2 medium potatoes, 1 diced onion, 4 small eggs, 4 cloves of chopped garlic, 100 gms grated cheese, 2 tbsp olive oil, chopped chives, salt and pepper to taste.
Preparation: Preheat your oven to 200°C. After scrubbing the potatoes, pass a fork through them and put them in the oven for about 40 minutes till they turn soft. Next, in a frying pan, heat oil and sauté the onion and garlic till they turn brownish. When you notice that the potatoes are cool, cut them into half and scoop the insides. Add the scooped out potato flesh and the grated cheese along with salt and pepper on the pan and stir it. Place the potato shells on the baking sheet and fill the mixture in. Press the mixture inside and then sprinkle chives on top. Now crack an egg on top of each potato. Cook this at 200°C for about 15 minutes and relish!
