Chocolate Nut Bark

Chocolate Nut Bark

You will need:

2 cups milk chocolate chips, melted
1 1/2 cups assorted nuts; hazelnuts, almonds and cashews

Method

Combine melted chocolate and nuts in a bowl and line a rimmed baking sheet with foil. Scrape the mixture onto the foil and spread it into an approximate 12-by-9-inch rectangle. Sprinkle with nuts and refrigerate for about 20 minutes. Cut into 11/2 inch pieces and store them in a jar for a tasty binge everyday.

Grape Jello Jigglers

Grape Jello Jigglers

You will need:

2 cups white grape juice
1 cup cold water
5 tablespoons of unflavoured gelatin
1/3 cup sugar
1 cup cold purple grape juice
1 medium red apple, diced
1 cup green and red seedless grapes, diced

Method

Bring the 2 cups of white grape juice to a boil. Pour water into a large heatproof bowl and sprinkle gelatine over it. Let it stand for 3 minutes. Add the grape juice to the gelatine and let it dissolve completely. Add sugar and whisk in purple grape juice. Refrigerate until the consistency of the mixture becomes that of a thin pudding. Gently whisk the mixture and stir in diced fruit. Pour it into a large pan and cover it with plastic without touching the jello. Refrigerate until very firm. This should take about 3 hours. Cut into squares and your treats are ready.

Fruit and Nut balls

Fruit and Nut balls

You will need:

3/4 cup sugar
1/2 cup dried cranberries
1/2 cup pitted and snipped dates
2 large eggs, beaten
1/3 cup chopped unsalted pistachios
1/3 cup chopped walnuts
1/3 cup chopped pecans
1 teaspoon rum extract
3/4 cup shredded coconut

Method

Cook sugar, cranberries, dates and eggs in a medium saucepan until mixture thickens. Heat it until it leaves a clear trail when a spoon is pulled through it. Put off the heat and stir in pistachios, walnuts, pecans and rum extract and let it cool for about 45 minutes. Roll balls and dip each into coconut flakes and store in the refrigerator.
