For the third edition of our easy lunch box recipes we bring you a recipe that will suffice your sweet cravings, pep up your mood and boost your energy levels all at once — Chocolate Granola Bites. Straight from Amrita Kaur’s kitchen, here is yet another healthy and yummy recipe that you can stack in a jar and munch on any time during work hours.
Recipe for the Chocolate Granola Bites:
For the Chocolate Granola Bites you need…
1 cup rolled oats/white oats ¼ cup puffed rice 1/4 cup peanut butter 1 tbsp honey 1 tbsp brown sugar 2 tbsp dark chocolate, roughly chopped Choice of nuts and seeds (Almonds, pistachios, cranberries, pumpkin seeds, sunflower seeds, etc)
To roast the nuts you need to…
Preheat the oven to 180 C. Spread the oats and nuts on a baking sheet. Place in the oven and toast for 8 to10 minutes, stirring occasionally until lightly browned.
While the oats are in the oven, combine the peanut butter, honey and brown sugar in a small saucepan over medium heat. Cook until the brown sugar has completely melted making sure you’re stirring it continuously. Finally, add the chocolate, stir well until melted. Remove from the flame.
To assemble the bites you need to…
Add the toasted oats and nuts and stir to combine. Set aside to cool for 10 minutes. Now working with dampened hands, shape into small balls and refrigerate for at least an hour before serving.
Expert’s Tip
*These will keep good for 15-20 days in an airtight container (refrigerated). Also, oats and nuts have fibrous properties and are considered extremely healthy. They are good for digestion and the peanut butter helps boost energy. Pop a granola bite before a presentation and you will see your stress levels stooping.
