1 ½ cup whole wheat flour
¾ cup baking soda
½ tsp salt
¼ tsp baking powder
¼ tsp ground cinnamon
1 tsp vanilla extract
2/3 cup honey
½ cup yoghurt
½ cup coconut oil
2 to 3 ripe bananas, peeled
¼ cup chopped walnuts (optional)
Preheat the oven to 400° F.
Line your muffin pans with muffin paper.
In a medium bowl, whisk wholewheat flour, baking powder, baking soda and salt.
In another large bowl, mix together the mashed banana, honey, vanilla, coconut oil and eggs.
Slowly, add in the flour and honey and blend whilst doing so.
Pour the mixture in the muffin pan and bake for 15 minutes.
LRT TIP: To make sure, your muffins are fully baked, use the toothpick method. Pierce your muffin with a toothpick in the centre. If it comes out clean your muffins are well done.
Vary the honey and other ingredients according to your specific taste.
