Recipe for the easy Chia Seed Pudding with fresh mangoes and coconut

For the pudding you need…

3 tbsp chia seeds
1 cup milk (You can use regular/coconut or almond milk)
1 tsp vanilla essence
1 tbsp sugar/honey/maple/agave
Mango slices
Some freshly grated coconut
Pistachio to garnish

To make the pudding base you need…

Combine chia seeds, milk, vanilla and sugar in a jar. Cover the lid and shake it well. Alternatively, you can whisk everything together in a bowl. Chill for about half an hour and stir once again, or you can chill it for at least 3 to 4 hours or overnight for better results.

To assemble the pudding you need to…

Chia seeds tend to absorb the liquid and become gelatinous. Transfer this mixture into a serving bowl or you can choose to serve the pudding in a pudding glass. Top it with some fresh mango slices and grated coconut.

Finally, scatter some toasted pistachios for garnish.
